Chocolate-Avocado Mousse

I love chocolate avocado mousse – it's such a delightful and versatile dessert. It incorporates healthy fats like avocados, making it a true winner in my book. The topping options for this dessert are endless. You can really get creative with coconut flakes, nuts (pistachios, almond slivers) and fruit (berries, pomegranate kernels).

To make it even more fun, I let my child pick his toppings by setting out small dishes filled with various healthy options. Remember these moments of curiosity and autonomy are gold for especially typical picky eaters. Maybe you can start a conversation about which textures and flavors you liked which is great for building good vocabulary about food (than just yucky or yummy) :)

Now, let's talk about the magic of avocados in this recipe. While you might not even detect their taste, they play a crucial role in creating a smooth and creamy texture. Please do not to keep this healthy ingredient a secret from your kids – most children already love avocados. It's all about fostering a positive relationship with nutritious foods, and this chocolate avocado mousse is a fantastic desert confirming that.

Ingredients:
2 ripe avocados
1/2 cup organic raw cacao powder
1/2 cup full fat coconut milk or almond milk
1/3 cup organic maple syrup to taste
2 teaspoons organic vanilla extract
1 teaspoon cinnamon to taste

Directions:
Combine all ingredients in food processor or high-powered blender and process until completely smooth.
Spoon into ramekins and add desired toppings.
Chill until set and serve.

Topping Ideas:
Unsweetened toasted coconut flakes
Organic/Sprouted nuts (hazelnuts, macadamia nuts, pistachios, almond slivers, walnuts, etc.)  
Organic raspberries, blueberries, or strawberries (in season)

You can also incorporate bananas into your chocolate avocado mousse (because let's be honest, what doesn't taste good with bananas?). Personally, I tend to leave out bananas because they can cause constipation (if that’s a concern) and have a high sugar content. If your child doesn't face any health concerns related to regularity or sugar, feel free to include them and savor the deliciousness!
